Ah, I finally figured it out. In the LaTeXiT preferences I had to 
select PDF as the format for copy/paste operations. I don't remember 
setting it to PNG and I had used it with PDF last year, so either it 
flipped on its own (eg, during an upgrade) or I did it and forgot it.
