Some tests here. For what is worth (given the different GUI vs.
command-line strategies, and the different versions of LaTeX and
packages), I have also added the times reported by OS X Textures in
the TeX Log window.

Summary first:

MacBook 2.16 GHz, 2 GB RAM
==========================

- LaTeX as installed by MacTeX:

user    0m0.152s
sys     0m0.032s

- LaTeX as installed by gwTeX:

real    0m0.118s
user    0m0.088s
sys     0m0.027s

- LaTeX as shipped with Textures 2.2.0b for OS X:

Mac Pro 2 x 2.66 GHz, 2 GB RAM
==============================

Then the gory details:
