I tend to keep most of the pdf manuals for all things TeX related in  
a folder. Call it, say, "TeX Manuals". Then you can drag this folder  
to the dock, to the Finder sidebar, whatever.
Actually, if it's in the Finder sidebar, then you have an easy way to  
open it from TeXShop... hit Cmd-O, click on the sidebar icon and open  
the manual you want. Easy :-)
