There are two ways: you either use the force option to force Fink to  
remove teTeX, or you use the correct way of removing first all  
packages that depend on teTeX (which can take some time in successive  
tries and demands parsing Fink's unattractive output). Once you've  
installed Mac TeX, Fink will probably find this installation and see  
dependencies satisfied again that you can rebuild and re-install the  
formerly removed packages.

Could be that Mac TeX's TeX Live already provides these TeX packages.  
(Could you mention which software you've installed that depends on  
Fink's teTeX?)

(In Fink the removal of a package only means that its contents is  
taken away from the disk while the package continues to exist. So you  
can easily install this package again. This also means that some 100  
MB disk space still will be used by teTeX source and package files.)
