I still think that is a misconfiguration problem. dvips should by  
default use /usr/local/texlive/2007/texmf-var/fonts/map/dvips/updmap/ 
psfonts.map, and this is normally a symlink to the file you're  
explicitly telling dvips to use:

Portable-de-Bruno:~ brunovoisin$ kpsewhich psfonts.map
/usr/local/texlive/2007/texmf-var/fonts/map/dvips/updmap/psfonts.map
Portable-de-Bruno:~ brunovoisin$ ls -l /usr/local/texlive/2007/texmf- 
var/fonts/map/dvips/updmap/psfonts.map
lrwxr-xr-x   1 root  wheel  14 Mar 28 00:10 /usr/local/texlive/2007/ 
texmf-var/fonts/map/dvips/updmap/psfonts.map -> psfonts_t1.map

I suspect that you have a leftover psfonts.map inside ~/Library/ 
texmf, resulting from some faulty operation of updmap, and this  
psfonts.map is used in place of the one in /usr/local/texlive/2007/ 
texmf-var.

I imagine that in your case "kpsewhich psfonts.map" would return:

/Users/<your-user-name>/fonts/map/dvips/updmap/psfonts.map

Again, my advice would be to erase this and similar files, then run  
updmap(-sys) with the appropriate syntax to make sure correct map  
files are regenerated inside /usr/local/texlive/2007/texmf-var, and  
then run TeXShop again.
