[OS X TeX] eps2pdf and grayscale eps?

Ok, I see that I should give epspdf a try. The advantage of epstopdf  
is that it converts all the often updated .eps-files to pdf  
automatically with every pdflatex-run
(I include them as \includegraphics[width=0.8\textwidth]{../../Bilder/ 
A4_kuchen.eps}).

By the way: Your article about TeX and Prepress helped a lot to get  
other things right.
