Put this in your .emacs:
(setq TeX-output-view-style (quote (
("^dvi$" "." "open -a texniscope.app %d")
("^pdf$" "." "open -a texniscope.app %o")
("^html?$" "." "open -a safari.app %o"))))

Works for me with Carbon Emacs Package Spring 2007 as downloaded from
http://www.apple.com/downloads/macosx/unix_open_source/carbonemacspackage.html
which is Based on Emacs 22.0.97 (CVS 2007-04-08)
