[OS X TeX] Building new formats (MacTeX)

No: I want all my documents to be typset with UK English hyphenation by
default.  I want the default language to be set to UK English by the
format file, not an entry in a document file.  This is for personal
convenience.  I might end up using my old method rather than trying to
learn enough about Babel to persuade it to do what I want.

Thanks.  I've got the Babel documentation (I printed out the latest
version - my printouts from the last millennium have probably been
superseded) and I've not found anything in it that explains what I need
to know.  

Thanks for the pointer to TCOBrowser - I'd never heard of it.  Not sure
I've got any use for it, but it's good to have been told about it.
