Do you want TeXShop use Gentium to display text or menus, or do you  
want TeX use Gentium instead of Computer Modern?

The easiest way would be to use XeTeX in TeXShop. The a bit longer  
way is to add this font family into MAP file fragments and to update  
the real MAP files then. The more promising way is to install them,  
either as TTF (http://ipe.compgeom.org/pdftex.html), or by converting  
them to PostScript Type 1 (http://homepage.mac.com/bkerstetter/tex/ 
fonttutorial-current.html, http://www.tug.org/applications/fontinst/).
