It's been a while since I used gnuplot, but the following steps should be
generally valid.
I don't have my ibook with me (my workplace is unfortunately a Windows
"groupie").
My gnuplot 4.0 installation is from the mac binary at
<http://sourceforge.net/projects/gnuplot>http://sourceforge.net/projects/gnuplot
with aquaterm from
<http://aquaterm.sourceforge.net>http://aquaterm.sourceforge.net .
(Aquaterm was not included with gnuplot in that distribution)

To launch gnuplot, I open the Terminal, cd to the folder which contains
gnuplot, enter "gnuplot" at the prompt. Then gnuplot launches and the
prompt changes to "gnuplot>". Then I type "set term aqua" to set the
terminal to aquaterm.

* Before trying to launch gnuplot, you must have X11 installed from the Mac
OSX Tiger disks.*
