As Herb said, it's the online help available on the Help menu, or at <http://bibdesk.sourceforge.net/manual/> (I just started updating the internet version with every nightly build, so it will refer to features not available in the released version).  Scroll down to see the appendix list.  Suggestions/bug reports/additions for the documentation are always appreciated, since developer-written help isn't always helpful :).
