The LaTeX Companion (2nd ed.) is pretty helpful for bst hacking, in  
my experience.  Maybe btxdoc would help as well (I haven't looked at  
it for a long time).

Thanks for filing the BibDesk bug; I just checked in a fix for the  
problem, so the next nightly build will allow exporting only the  
selection (in the correct sort order).
