Your pdfTeX version seems to be very old – too old, to create a PDF
file format of version 1.4 ...

There are "transparent" ways to transform a PDF file from pdfTeX: you
can print it to PDF! I think since Mac OS 10.3.8 you get a print
dialog form where you can choose the PDF button. And under this
button a handful choices is buried. One promising option is "PDF-X" –
you should try this.

And you should also try to find and describe how your pdfTeX output
went to the Palm Pilot and which software was preparing the file for
display, particularly which viewer application is being used and
which version of PDF does it support. And please look into the LOG
file of your PDF file. There you'll find in the beginning a line
containing something like ``3.141592-1.30.4-2.2´´ – this is the TeX
version followed by the pdfTeX version (1.30.4 in this case).
