Maarten:
you can get EPSI with jpeg compression inside - maybe you can point 
those Omnigraffle folks to GraphicConverter or the free jpeg2ps tool, 
which both produce really compact EPSIs from bitmaps 
(http://www.pdflib.com/products/more/jpeg2ps.html).
