[OS X TeX] how to convert .doc to .TEX?

If the document's not too too complicated, I think KWord has both .doc
and .rtf import filters and a LaTeX export filter. I never tried them,
so don't ask me about the quality, but that might be worth a try...

KWord kan be obtained from Fink and, AFAIK, from DarwinPorts... It's a
pretty big download and compile job, but it's fully automated. Never had
any trouble with it in Fink.
