I don't know what "Helveticize" means, but I use \pstcol (I'm guessing 
pdftricks stuff will do the job, too.) along with the commands 
\textcolor{colorName}{textToBeColored} for colored text and 
\definecolor{colorName}{rgb}{.#,.#,.#} to define new colors. Colors can 
be defined in other scales than rgb. See the LaTeX Graphics Companion 
if you have it.
