Personally, a keyboard shortcut for, say, \textbf{} (cmd-b would be 
nice) and \emph{} (cmd-i?) would be much more help than the panel...

Yes! Pleeeeezz!!!
No need for anything very fancy. Although, the current implementation 
applies typeface changes to the whole source... An "alternative" would 
be a TextEdit-like RTF-aware editor which would typeset directly from 
sources in RTF (with an actual .tex in a package, say). No need for 
fancy conversion. It'd still be TeX code. But the "interface" would be 
RTF.

The major advantage of LyX seems to be something similar, but the 
program itself feels clunky. Plus, Services-aware Cocoa apps make for 
such awesome-cool editors!
