[OS X TeX] Search paths, Custom formats in TeXShop

This is very useful information! I have two questions though:

1. With
> \input{hyphenation}
do you get hyphenations for all the languages you selected when you 
first installed teTeX with i-Installer ?

2. What do you mean when you say
> use it for typesetting
? How does one use it? Through the terminal ? How ? Can one use it 
through TeXShop ? Is the only way to specify it in the preferences ? Is 
there the possibility to have a menu of custom formats ?
