There is a free little utility called 
CocoaBooklet. If you drop (an alias of) it to
~/Library/PDF Services, you can "print" to an A5 
booklet. It will sort the pages so that you end 
up with a "real" booklet: a 4 page booklet will 
have pages 1 and 4 on one side, and pages 2 and 3 
on the other.

I routinely produce little A5 booklets this way 
and it works great. Just do the stuff you want, 
hit Cmd-P and select CocoaBooklet from the PDF 
button on the bottom left.
