I'd recommend the installer from mindlube:  
http://mindlube.com/products/emacs/index.html. It is a bit LaTeX  
unaware, but it'd easy to give it AUCTeX and preview-latex too.

Best choice might by a Japanese much enhanced version from CVS:  
http://home.att.ne.jp/alpha/z123/emacs-mac-e.html or  
http://www.apple.com/downloads/macosx/unix_open_source/ 
carbonemacspackage.html. With a bit of customization it might become a  
hit! I think there are some relations to yatex (Yet Another LaTeX mode  
for Emacs)
