Create <http://www.stone.com/> and OmniGraffle 
<http://www.omnigroup.com>/> both export PDF or EPS, as well as several 
bitmap formats; also, both are Cocoa programs, and have the added 
advantage of supporting Equation Service and/or the LaTeX Equation 
Editor.  I'm using Create right now to convert some of my vector 
graphics into TIFF files for a PowerPoint presentation; drop the 
graphic in, select it, then drag out of the image well as TIFF.
