It  will depend  on requirement  of participants  and time  available.
"memoir"  is being  reported  as a  good class. You  may  like to  see
paricipants to  write lettre in TeX. Till  date I am unable  to find a
good  and simple  class for  letter writing. Basic  "letter" class  is
stupid. "akletter"  seems to be  very powerful,  but I could  not find
time  to  understand  it. There  are  very  large  number  of  classes
avialable. The problem is how to  choose, which server the purpose and
is easy to use.

So, you may offer one lecture  on class hunting and may concentrate on
basic classes only in your course content. Needless to say all type of
cross-references and  bibliography will be introduced. If  you want to
introduce  some package  for Hindi  or  such languages,  that will  be
another dimension.
